Mike's Low-Fat Recipes

Chicken Fajitas

Boneless, skinless chicken breasts

1 can Old El Paso Fat-Free refried beans

1 jar Old El Paso salsa

1 package Healthy Choice fat-free cheddar cheese, shredded

1 chopped onion

Shredded lettuce

Soft-shell tortillas

Season the chicken breasts with your favorite seasoning and grill. While the chicken is cooking, warm the refried beans and prepare the onion and lettuce. When the chicken and beans are ready, place a tortilla on a plate and warm in the microwave for 30 seconds. Place the grilled chicken (cut in strips) and refried beans in the warm tortilla followed by the salsa, cheese, onions and lettuce. Roll up the tortilla and enjoy!

Note: I use Old El Paso because they don't use sugars or oils.

Strawberry/Banana Cake

Low-fat pancake mix

1 box Jell-O sugar-free banana instant pudding

Fresh strawberries

Egg whites

Skim milk

Prepare the pancake mix as directed on the box. Make two pancakes approximately nine inches in diameter and cool. While the pancakes are cooling, prepare the pudding using skim milk. Then place one of the cooled pancakes in a nine-inch pie or cake pan. Place half of the pudding on the pancake and smooth evenly. Then place the second pancake on top and cover with the remaining pudding. Cover the top with the sliced fresh strawberries. Chill and serve.

Lasagna

1 box lasagna noodles, regular or whole wheat

1 jar low-fat spaghetti sauce

1 package of ground turkey breast

1 package fresh mushrooms, sliced

1 package Healthy Choice fat-free mozzarella cheese, shredded

Minced garlic

Italian seasoning

Fat-free parmesan cheese

Cook the noodles according to the instructions on the box. While the noodles are cooking, spray a non-stick skillet with Pam and sauté the mushrooms and minced garlic (how much garlic you use is your preference). Add the ground turkey breast and brown. Stir in the spaghetti sauce and Italian seasoning. Simmer for 10 minutes. Spray a casserole dish lightly with Pam and add a layer of noodles followed by a layer of the turkey/spaghetti sauce mixture. Repeat until finished (usually about three layers). Place the shredded mozzarella cheese on top and then sprinkle with parmesan cheese. Bake at 350 degrees for approximately 35 - 45 minutes.
